This is a low carbohydrate recipe, friendly to ketogenic diets, but just plain yummy!
Ingredients:
12 oz. package bulk sausage, (I used Jimmy Dean’s Hot ground pork sausage)
8 oz. cheese, grated cheddar
1 cup zucchini, fresh grated
1 cup almond flour
1/2 cup coconut flour
Seasonings to taste, I used about 1/4 teaspoon of garlic powder, 1/2 teaspoon onion powder and a shake of Mrs. Dash Onion and Herb.
Directions:
Preheat oven to 350º. Mix all the ingredients in a mixing bowl. I can only go so far with a spoon, and end up doing the final mixing with my hands because then you shape them into balls about one inch in diameter. Arrange on a baking sheet so they are not touching. I use stoneware or DeMarle silicone sheets. Bake for about 20 minutes or until golden brown. Put on a paper towel to cool. Good hot or room temperature. Store leftovers in the refrigerator.
