We decided to grow cauliflower in our garden this year and they are doing great! So I had to find some new ways to cook it. Here’s my favorite keto friendly recipe:
Ingredients:
One medium cauliflower, cut into bite size chunks and lightly steamed
½ cup Ranch dressing (I have making my own organic)
2 strips of Bacon, cut into small pieces, bacon fat included
1 ½ to 2 cups of Cheddar cheese, grated
One small onion chopped (optional)
Salt and pepper to taste
Directions:
Preheat oven to 375 degrees. While the cauliflower is steaming, fry the bacon and onions together. Then combine everything but the cheese, and put it into a casserole pan. Top it with the cheddar cheese and bake about 20 minutes or until starting to brown a little. Enjoy it while it is hot. If you don’t have fresh cauliflower, you could use frozen florets.
