Ingredients:
5-6 oz of canned white chicken or chopped leftover chicken or turkey
3 cups coarsely shredded cabbage
2 stalks of celery, chopped
1/2 cup walnut pieces
1/2 dried cranberries, either unsweetened or reduced sugar Craisins
Mayonnaise, about 1/2 cup or whatever it takes to make the salad moistened
Optional, 3-4 drops of liquid stevia if some sweetness desired.
Honestly, I don’t measure the ingredients, I just eyeball it and throw it all in a bowl and mix it well. I come back to this recipe time after time, because it is delicious, easy to make, and makes enough to have some leftovers for the next day. Great for brunch or lunch or even dinner with some other sides.
