Butternut Sausage Delight

Ingredients:

16 oz. of turkey kielbasa or smoked sausage (like Eckrich or Hillshire Farms), sliced

One small or 1/2 large butternut squash, peeled, seeded, and cubed into 1″ chunks

One small onion, chopped

2 stalks of celery, sliced

2-3 tbsp. olive oil/ may use part coconut oil

2 tbsp. butter

1/2 cup of water

Directions:

Put the olive oil/coconut oil into a large skillet and saute the onions and celery for a couple of minutes. Then add the sausage and the butternut and water, mix and simmer covered until the butternut is tender, about 20 minutes or so. Add the butter toward the end and season to taste with salt and pepper. Great main dish, fresh or left over.
